Tonight–fresh figs, split, topped with goat cheese, drizzled with an aged balsamic and roasted on a preheated grill for a handful of minutes. O.M.G.
Kamikaze Mediterranean…chop up some grilled eggplant, kalamata olives chopped, tomatoes and feta cheese. Throw in some corn and some wild rice or black barley. Splash of olive oil. Oregano. Fresh parsley or cilantro. Salt and pepper. Serve just warm. Wash it down with a white or dry rosé. (hmmm…maybe I have to start taking pictures…?)
Grab an average size Mason Jar. Add juice from 2 or 3 limes (I use small key limes.) Throw in a couple of healthy spoonfuls of orange-ginger marmalade (I use this wicked stuff) or regular citrus if you can’t find with ginger. Add some fresh ginger, ginger preserve or chopped up candied ginger. Fill that sucker up with gin. Shake and freeze for a day or two, if you can wait. Fill a glass with ice, pour a couple of ounces of magic potion and fill it up with tonic water. Top with a slice of lime. Put your feet up and feel the magic start to take hold. Repeat.
