As some of you know, I occasionally post some of my improvisational cooking adventures. So here is a hit from tonight.
Rip and massage the hell out of a couple of large pieces of kale with a little olive oil. Add lightly steamed broccoli, cut in small pieces. On the bbq…grill 3 or 4 stalks of asparagus and two peaches, sliced. Chop ‘em up and throw then in. And some pumpkin seeds and chia seeds. Toss with a little more olive oil (I used lemon) and a splash of a good balsamic. (You could use white or red)
Coming soon-warm spinach salad with strawberries and dates.
Kamikaze Mediterranean…chop up some grilled eggplant, kalamata olives chopped, tomatoes and feta cheese. Throw in some corn and some wild rice or black barley. Splash of olive oil. Oregano. Fresh parsley or cilantro. Salt and pepper. Serve just warm. Wash it down with a white or dry rosé. (hmmm…maybe I have to start taking pictures…?)
